Sarajishvili XO – brandy created on the basis of classic recipes and composed of the oldest wine distillates occupies an important place among the products signed by the name of David Sarajishvili.
This type of brandy is made from a combination of more than 15 different distillates, the oldest of which are over 30 years old.
The unique taste of this noble drink is achieved thanks to special climatic conditions which are ideal for the growth of autochthonous grape varieties. Grapes for this cognac are harvested in the eastern and western regions of the country. The quality of the drink is influenced by a large number of factors, including appropriate climate, use of the most modern equipment, proper tillage and even the variety of blends.
Sarajishvili XO cognac is kept in wooden barrels for at least three years. At the beginning of their journey, white grapes have to undergo double distillation after which they mature for a certain time. We can say that the history of this cognac’s production began in 1884. The enterprise began to develop rapidly and it quickly became a full-fledged cognac monopoly in the Russian Empire. Drinks of this brand regularly win awards at exhibitions and are in great demand even today.
