Tasting notes
Colour: medium ruby red.
Nose: the wine has a delicate bouquet of strawberries and spices and a hint of vanilla.
Palate: smooth and delicate texture with lots of fruit, liquorice notes, soft oak and a smooth finish with sweet tannins.
Vinification
The grapes are hand-picked at optimum ripeness. After fine de-stemming and crushing, fermentation is followed by temperature controlled fermentation (23-28°C) in stainless steel tanks. The wine was fermented using cultured yeast strains. Management of the skin and cap was performed by délestage and remounting. After 12-15 days of maceration, the wine was clean and transferred to malolactic fermentation and 9-12 months of aging in 225 l oak barrels. Maturation continues in stainless steel tanks prior to the bottling process, supplemented by maturation in bottles at optimum temperature before release.
Food
Wine Napareuli goes well with grilled meat, game, medium-ripened cheeses.
Temperature: 18 °C.
Recommended to store at 15 to 18°C.
