Quince Compote
Quince — aromatic fruits with an unmistakable fragrance that sits somewhere between pear and apple, yet is entirely its own. Raw quince has hard and astringent flesh and is eaten mainly cooked. The compote is the most natural way to bring out the best of quince: a gentle, less sweet taste with a character you won’t find in any other fruit.
Quince compote is different from what you might expect — and that is a good thing. It is less sweet than strawberry or apricot compote, lightly tart, with a pronounced floral fragrance of ripe quince. In the Orient, quince has long been used in savoury dishes, where it adds a gentle sour note. For this reason the producer recommends quince compote with grilled meat and fish — the natural acidity balances richer flavours and refreshes the palate where sweeter drinks would fall flat. Try it warm as an autumn drink instead of tea. Also excellent as a base for hot mulled punch with star anise and cinnamon.
