Compote Cornelian Cherry
Cornelian cherry (dogwood) is a resilient shrub or small tree cultivated in Europe for centuries. Its small, deep red fruits — cornel berries — ripen in autumn and are valued both for their refreshing tart taste and their properties. In Georgia, cornelian cherry is a traditional autumn crop and the compote is a classic passed down through generations.
The berries have a sharp sweet-sour taste reminiscent of plums. The compote carries this taste beautifully — bold, refreshing, with a pleasant tartness that does not sweeten or overwhelm. Less sweet than strawberry or apricot compote, yet all the more versatile for it. The producer recommends it with grilled meat and fish — and rightly so, the natural acidity works as a perfect foil to richer and meatier flavours.
Chilled as a refreshing drink or warm as a fruit tea alternative on cold days. Excellent with roasted or grilled meat, fish or game. Try it as the base for a hot spiced punch with star anise and cinnamon.
