Wine production
Ripe Saperavi grapes are harvested by hand. After being separated from the stalks, the berries are cooled to 40 °C and gently pressed in a pressure-controlled pneumatic press and then macerated on the skin for 8-10 hours. Fermentation in stainless steel vats at a controlled temperature (15 – 18 °C). Once the fermented juice has reached the optimal balance between acidity and sweetness, fermentation is stopped by chilling the wine.

Pirosmani Rose goes well with roasted and smoked meats and cheeses.
