- Late harvest – Saperavi grapes are picked at an advanced stage of ripeness, giving the wine its natural sweetness without any added sugar
- Naturally arrested fermentation – fermentation is stopped by gentle cooling, preserving part of the grapes’ natural sugar and the wine’s characteristic velvety texture
- Maturation is overseen by experienced Kakhetian winemakers who combine traditional methods with the modern technology of the Khareba winery
