Vinification
Grapes are hand-picked at the optimal level of their maturity. Following the traditions of Kakhetian winemaking, softly destemmed grapes are gently crushed and fermented on skins in stainless-steel tanks for 10-14 days. After the fermentation is over, the wine is pumped to another tank for further refinement. The wine can mature for several years. Then it is bottled.
