Utskho suneli or blue fenugreek is a spice much used in Georgian cuisine. The spice gives the food an unusual aroma and specific taste. Spices can be used in the preparation of meat, fish and vegetable dishes.
In Georgia, utscho suneli is used in virtually all traditional dishes, including charcoal soup, lula-kebabs, satsivi, swan salt and ajika.
