Vineyards at 600–700 metres altitude with alluvial-sandy soils give Saperavi grapes a different dynamic than lowland sites — more pronounced acidity and a more complex aroma. Danieli Winery, the family estate founded in 2013 by Olaf Malver and Eka Tchvritidze, hand-harvests its grapes and ferments them at controlled temperatures before bottling with minimal filtration after 4 months of cold stabilisation. Three bottles of this wine are the ideal introduction for anyone wanting to discover how altitude shapes the character of a Georgian red.
