Sarajishvili XO – Mature Georgian Brandy with Distillates up to 30 Years Old

XO (Extra Old) cannot be rushed. Some of the distillates at its heart today were laid down in casks in the last century. Whole generations of spirits rest in the Sarajishvili cellars in Tbilisi – a place jokingly called “Georgian paradise”. For XO, the master blender selects fifteen different distillates and combines them so each contributes something of its own: one fruit, another spice, another the depth of old oak.

The base is white Georgian grape varieties from both the east and west of the country. The wine is double-distilled before its long journey in oak casks begins. The different climates of Kakheti and western Georgia give the distillates distinct characters – and their union is what makes XO so complex and layered.

David Sarajishvili’s legacy

In the 19th century, David Sarajishvili brought French cognac-making know-how to Georgia and began building the collection of distillates his successors still draw on today. How to serve

XO deserves time. Pour it neat into a brandy glass at room temperature, let it breathe for a moment and sip slowly. It shines as a digestif after a festive dinner, with a piece of dark chocolate or a good cigar. Store upright in a cool, dark place.
