Green tkemali is made from unripe mirabelle plums harvested in spring. That very immaturity is the key to everything — it gives the sauce a sharp, fresh acidity that you simply won’t find in the red version.

Green tkemali has a distinctly sour and fresh taste that perfectly complements grilled meat, fish, vegetable dishes and potatoes. It is not a sauce that hides — it is a sauce that wakes a dish up. The complexity comes from a carefully chosen herb blend: green mirabelle plums, garlic, coriander, ombalo (a Georgian herb similar to mint), fennel, sugar and salt. This unique mixture creates a refreshing and aromatic sauce that is an indispensable part of Georgian cuisine.

Green tkemali is an excellent dip for meats, grilled fish or vegetable dishes. It can also be used as an ingredient in soups, marinades, or served with rice and potatoes. Try it instead of mustard in a burger, as a wrap dressing, or mixed with plain yoghurt as a gentle dip for flatbread.
