Tkemali exists in two worlds. The green version is the most sour — the red is the mildest of all tkemali varieties. Where green tkemali bursts with freshness and acidity, the red rounds and warms. It is a sauce for everyone — including those who prefer their sour notes on the gentler side.

Tkemali is a sweet-sour, mildly spicy Georgian sauce made by cooking and straining Georgian wild plums, then blending with crushed garlic and other ingredients — coriander, dill, chilli peppers. The result is a thick, aromatic sauce where ripe fruit, gentle spice and garlic sit in perfect balance. No single flavour shouts over the others.

Used mainly with potato dishes, fried or grilled meat, poultry and vegetables. In a Georgian household it sits on the table at every meal — whether grilling shashlik, roasting chicken, or simply frying potatoes.

Red tkemali also surprises in unexpected places: with cured ham, roasted aubergine, or as a ketchup replacement on pizza.
