Wine production
The grapes are harvested by hand after reaching optimum ripeness around mid-September. After de-stemming and pressing, the grapes are cooled to 4 °C and macerated on the skins for approximately 8-10 hours. The juice is then separated and allowed to settle. Further, fermentation (fermentation) takes place in stainless steel tanks at a controlled temperature (15-18 °C) and using selected yeast cultures. After fermentation, the wine is purified by pumping it into another tank and is further trained and aged. The first batches are bottled from February to April.
