Fruit jelly (also known in confectionery by the French term pâte de fruit) is a traditional sweet made from fruit purée or juice cooked with sugar and a gelling agent until it forms a dense, slightly chewy mass. Unlike rahat lokum, which is starch-based, fruit jelly gets its structure primarily from natural pectins and the fruit itself, giving it a more pronounced, cleaner fruity flavour. The cubes are traditionally coated in crystallised sugar, which adds a light crunch and prevents sticking.

This version from Joyco additionally contains pieces of dried fruit, adding another dimension in both flavour and texture to the classic jelly – a combination of the soft, chewy mass with denser, chewier pieces of dried fruit.
